docs: rename the licence to GAIEST, drop the pronunciation guide (#1388)

* docs: rename the licence to GAIEST, drop the pronunciation guide

The GAI Licence becomes the GAIEST Licence โ€” the Generative Artificial
Intelligence Evolving Software Technology Licence โ€” bumping to Version
1.2 / LicenseRef-GAIEST-1.2 with a lineage note, and the pronunciation
guides come out of the LICENSE header and README. The canonical URL
(11factor.org/gai-licence) is unchanged here since that site lives
outside this repo.

* docs: point the licence URL at 11factor.org/gaiest-licence

The canonical page moved with the rename (elevenmessenger/11factor#2);
the old /gai-licence address redirects.
